Beetroot & Champagne Soup

I’ll be the first to admit that for a long time, I was never a fan of beetroot. Like many of us, my only experience with it was that shredded, pickled version that inevitably finds its way onto every Sunday roast plate or braai salad table.

My perspective shifted entirely the moment I tasted baby beets roasted in olive oil and garlic. That sweet, earthy depth changed everything (though you can still keep the pickled stuff!). While most people associate beetroot with a hearty, farmhouse Borscht—a wonderful winter staple in its own right—beetroot is capable of so much more. This Beetroot and Champagne soup is a testament to the plant's sophisticated side. It is gentler, more refined, and a beautiful way for a Home Healer to bring a touch of elegance to the kitchen table..

A NOTE ON SERVING

This is truly a special soup that surprises the palate. The tartness of the raspberries breaks the deep earthiness of the beetroot, while the champagne provides a sophisticated, delicate finish. To truly appreciate these subtle layers of flavour, I recommend skipping the traditional side of bread. Instead, try serving it with a couple of salty Parmesan crisps—they provide the perfect crunch without overshadowing the complexity of the soup.


INGREDIENTS

3 medium beetroots, cooked and roughly chopped

1 small red onion, finely chopped

90g fresh raspberries

1 Tbsp white sugar

1 tsp red wine vinegar

600ml vegetable stock

4 Tbsp champagne or sparkling wine

Fresh microgreens to serve


INSTRUCTIONS

  • Place the beetroot, onion, raspberries and sugar in a pot and heat gently for 10 minutes

  • Add the vinegar, bring to the boil and cook until it reduces by half

  • Add the stock, bring to the boil, cover and cook for 30 minutes

  • Remove from the heat and blend until smooth

  • Add the champagne, season lightly sprinkle with microgreens and serve
