Aji Huacatay (Khakibos)


Yes, this is khakibos - the very same weed that you are thinking of. Are you surprised that you can eat it?


Like so many weeds, khakibos has numerous benefits, not least being the flavour. In Peru it is a staple food, served as a vegetable, flavouring and in so many sauces and marinades.


This particular sauce has a nice bite to it, but you can always leave the chili out if you are not a fan of the hot stuff.


Ingredients

  • 2 cloves garlic chopped
  • 2 Tbsp vegetable oil
  • 3 spring onions roughly chopped
  • 1 Tbsp aji amarillo paste (replace with any chili paste or a chopped jalepeno)
  • 4 Tbsp huacatay (Khakibos) leaves, finely chopped
  • ½ cup mayonnaise
  • 2 Tbsp fresh coriander, finely chopped
  • Salt and pepper to taste


Instructions

  • Blend everything together until it is a smooth paste.


Serve as a sauce for pretty much anything savoury. Meat, poultry, fish, veggies, cheese, or even as a dip or spread on ciabatta bread.
