MAIN OR SIDE DISH

There is something so satisfying about harvesting dinner directly from your garden beds. The next time you are picking a bundle of chard, I highly recommend grabbing a handful of indigenous Wild Garlic to go with it.

It is the perfect way to bring that robust, savoury garlic punch to your cooking without the lingering "garlic breath" that usually follows—the very reason this South African treasure is known as 'Society Garlic' in the rest of the world!
This pairing of wild garlic with Swiss chard is a wonderful example of how our local plants can elevate a simple kitchen staple.
INGREDIENTS
4 potatoes, peeled and chopped
4 cups Swiss chard, washed and chopped
2 onions, chopped
1 cup wild garlic leaves, chopped
Oil
Salt and pepper

INSTRUCTIONS
Boil the potatoes until soft. Drain
Heat a little oil in a pan and add the onions.
Cook until the onions are soft, but not brown.
Add the spinach and wild garlic and cook for another 4-5 minutes, stirring so it doesn’t burn.
Add the potatoes and mix together, breaking the potatoes slightly
Serve hot
