Beyond their reputation as a nuisance, they offer cheerful yellow blooms and magical puffy seed heads that have delighted generations. With a long history spanning Ancient Egypt, Greece, Rome, and China, they are far more than garden invaders; they are a valuable resource worth keeping.

THE HERBAL KITCHEN

In the culinary world, dandelion is treated as a bitter green similar to radicchio or rocket, making it a perfect partner for sweeter salad leaves. While the leaves provide a sharp tang, the bright flowers offer a sweet, nutty flavor that works beautifully in fritters, honey infusions, and syrups. Even the stems can be steamed as a vegetable, and the roasted roots were a popular coffee substitute during wartime.
