Purslane Chimichurri

Purslane is a weed that grows everywhere and, being a weed, there is always lots and lots of it.

Go ahead and pull it up, but before you chuck it out, make this recipe. It's so good you are going to want your purslane to grow quicker!

Purslane is also delicious in a salad, makes a magical face mask and has more omega 3 than some fish oils. Another great reason to eat it!

1 cup purslane leaves

1 cup Italian parsley leaves

1 tablespoon chopped fresh oregano

3 cloves garlic - minced

1 small jalapeno pepper

1/2 cup extra-virgin olive oil

2 tablespoons red wine vinegar - or to taste

Salt and freshly ground black pepper

Combine all ingredients in a food processor or blender.

Process until smooth

How simple is that? Serve it with bread, veggies, steak, cheese, fish.....the list goes on and on
