Summer Savory is a delicate annual aromatic herb native to the Mediterranean region and parts of the Middle East. With a history stretching back over two thousand years, it was highly valued by the ancient Romans and Greeks, who used it as a flavouring and medicine long before it became a staple in European gardens. The botanical genus name Satureja is linked to the satyrs of classical mythology, reflecting its historical reputation as a herb of passion and vitality.
THE HERBAL KITCHEN
In the kitchen, Summer Savory is celebrated for its warm, peppery, and slightly sweet flavour, which is softer and more delicate than that of Winter Savory.
It pairs exceptionally well with beans, lentils, and pulses, earning it the traditional German name Bohnenkraut (bean herb), as it is believed to assist in the digestion of heavy pulses.
It is also a lovely addition to vegetable soups, stuffings, and roasted meats, providing a subtle, earthy depth without overpowering the natural flavours of the dish.


THE HERBAL APOTHECARY
Historically, this herb has been used as a carminative and digestive aid to relieve stomach upset, bloating, and colic. Its mild antiseptic and antibacterial properties made it a trusted home remedy for soothing sore throats and mild respiratory infections. Summer Savory serves as an excellent companion plant in the vegetable garden, particularly when placed near beans and onions, where it helps to deter pests. Its tiny, delicate pink-white to mauve flowers are highly attractive to bees, butterflies, and other beneficial pollinators
